St. Pattys Day
Spring’s officially start is this Friday but with freezing temperatures and snow likely coming this weekend it still feels a lot like winter around here!
I headed out for an after work run last night planning on 4 miles but when I got 1.5 miles away from home it started to HAIL so I turned around and hightailed it home. Everyone that drove passed me during the mini storm must have thought I was crazy!
But of course this is New England and 10 minutes later the hail was gone and the blue skies were back. When Henri got home from work he found me doing some strides down the street. It felt great to get my legs turning over and just turn things loose – 4:48 average for the 6 strides.
A few years ago my mom bought me this shirt at the Boston Marathon expo and I feel like St. Patty’s day is my one chance each year to wear it!
To keep the green theme alive I cooked up some double stuffed acorn squash for dinner (hey, they’re green on the outside)!
I baked the squash at 350* for 40 minutes (in a pan with about an inch of water in it) – scooped out the insides and mixed them with forbidden rice, cooked steak, spinach, salsa and topped them with cheddar cheese. They were easy to make, really tasty, and packed full of nutrients!
