Chocolate PB Energy Bites

Now, onto a yummy recipe I have to share with you guys!
So Henri has two main complaints about our kitchen situation…
1) I create a LOT of dirty dishes when I cook (I cook, he cleans 😉 )
2) We don’t have a lot of easy to grab-and-go snacks in the house, if you want a snack some sort of prep work/cooking is involved.
I’m trying to work on both of these, but the hard thing about #2 is that most grab-and-go snacks from the store are processed, not all that healthy and/or are expensive! Recently I’ve been making a batch of energy bites on the weekend so that there is an easy snack for Henri, Liv or I to munch on when we get hungry throughout the week.
These Chocolate Peanut Butter Energy Bites were such a hit that I had to share the recipe! They came together in less than 15 minutes and lasted us a whole week.
Not only did Henri approves, Liv loved them too! In fact, she loved them so much that when I wanted to eat one I had to do so sneakily so she wouldn’t see and demand that I “share” my entire bite with her! haha
I brought 2-3 to work with me each day for an afternoon snack and we even brought a few for family outings in case Liv (or I) got hungry. They travel well, are easy to eat on the go and are surprisingly filling thanks to the satiating ingredients that they are packed with!
If you’re on the hunt for an easy, on-the-go snack you’ve got to give these a try. 🙂
- 1 cup oatmeal
- ¼ cup ground flaxseed
- 2 tbsp cocoa powder
- ½ tsp salt
- ½ tsp vanilla
- ¼ cup maple syrup
- ½ cup PB
- ½ cup shredded coconut
- In a medium bowl mix together all the ingredients until they are well combined.
- Divide into 15 equal parts and roll into bite-sized balls.
- Store in the fridge for up to a week.
