Cast Iron Skillet Pizza

After class on Wednesday Henri’s parents drove me to LAX so I could catch my flight home to Boston! After my parents picked me up, my mom and I grabbed lunch with a family friend before we (me and my parents) hopped in the car and headed to NYC for my sister’s indoor conference meet today and tomorrow!

I’ll catch you up on my trip tomorrow but now I’m going to share my new favorite pizza recipe! You guys – this pizza is amazing! Yes, my photography skills are lacking but trust me, try this at home!

Start with a cast iron skillet and grease it up with a little olive oil.

Press a package of store bought dough (I use Trader Joe’s) into the skillet, covering the bottom. Biggest homemade pizza tip: let your pizza dough rest at room temperature for a few hours before rolling it out. When dough is cold and you try to work with it it doesn’t stretch as well and leaves you with a tough crust.

Place the skillet on the stove over medium heat for 5-8 minutes. While dough is cooking spread your favorite sauce over the crust.

Add your favorite cheese and toppings as well – I went with pepperoni, peppers and onions!

After your crust has gotten a little crunchy transfer the pizza (skillet and all) to the oven @ 525*. Bake for about 10-12 minutes or until cheese is nice and bubbly.

Remove from skillet and serve!
