Banana Chocolate Chip Protein Breakfast Cookies
A few weeks ago Vital Proteins offered to send over some new-to-me products to try out. Henri and I have been using their Unflavored Collagen Peptides since August and really love it so we were super excited to try out some of the things we’d been eyeing for a few months. After poking around the website a little bit Henri and I settled on trying the Beef Liver Capsules, the Dark Chocolate Sports Greens, and the Banana Cinnamon Vanilla Whey Protein. So far my favorite is the Banana Cinnamon Vanilla Whey and so far I’ve used it in some protein pancakes and these Banana Chocolate Chip Protein Breakfast Cookies.
I love a good excuse to eat cookies for breakfast and these cookies are a completely acceptable breakfast in my books. Not only are they loaded with goodness in the form of oatmeal, flax seed, coconut oil, bananas and whey protein, they are also super soft and fluffy!
They make a great grab-and-go breakfast and settle well pre-run. But they’re also tasty enough to satisfy a sweet/chocolate craving. I’m already imagining adding some peanut butter or chopped nuts in a future batch for that classic banana, chocolate, peanut butter combo. 🙂
I’m not the only one around here that’s been loving these cookies. They’ve have been a hit with Liv as well – I’m talking every time she sees the plate of cookies on the counter she asks for one, haha. Since they are so healthy I give in every time and she thinks she is lucking out BIG time because of the chocolate chips!
Those little, pointed toes… I just can’t handle the cuteness! **insert all the heart eye emojis here**
- 2 ripe bananas (mashed)
- 1/2 cup coconut oil (melted)
- 1 tsp vanilla
- 1 egg
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 cup flour
- 1 1/2 cup oatmeal
- 1/4 cup ground flax seed
- 1 tsp baking soda
- 1/2 cup mini chocolate chips
- Preheat oven to 350* F.
- In a large mixing bowl whisk together the bananas, coconut oil, vanilla and egg.
- Add both sugars to the bowl and whisk.
- In a separate, smaller mixing bowl stir together the flour, oatmeal, flax seed and baking soda.
- Add the dry ingredients into the banana mixture along with the chocolate chips and stir until well combined.
- Scoop dough onto 2 separate cookie sheets, dividing the dough into 24 cookies.
- Bake at 350* F for 15 minutes, rotating which cookie sheet is on the top rack about half way through baking.
- ENJOY!
